Arroz Doce -Portuguese Rice Pudding

Summer is over, today I went for a seaside bicycle ride and the beaches were almost empty again. After a long summer the tourists went away and it seems they the warm weather went with them.

Today I decided to make a Arroz doce, the portuguese rice pudding to celebrate the arrival of the Autumn weather. Ahh yes..and it is also the Animal day, so sniff on Timmy..sniff on! 🙂


  • 2 liters of whole milk
  • 1 tablespoon of butter
  • 10 tablespoons of sugar
  • 1 cinnamon stick
  • cinnamon powder
  • 2 lemon zests
  • 2 egg yolks
  • 1 and 1/2 cup of rice (In Portugal we use Carolino but with Arborio rice you might achieve even more creaminess in the results)
  • 1/2 cup of water


In a pan boil a bit of water and add the cinnamon stick, the lemon zest to release the aromas. Add the rice so it starts cooking. Add the milk, the butter and the sugar and let it cook. Always keep stirring it, it helps to have a more creamy result. When the rice almost cooked turn off the heat and add the two beaten yolks it ( add some milk to the beaten yolks outside the pan and let the temperature of the rice reduce a bit, it is the best way to make sure you will not cook those yolks). Turn on a lower heat and keep slowly stirring a bit more until you reach a creamy rice pudding.

To finish take off the cinnamon stick and zest. Transfer the pudding to a nice container, allow it to cool a bit and only then, decorate the top with a nice cinnamon powder design. Be original! 🙂
